Pressure Cooker Salsa Chicken

This is another great pressure cooker recipe to have up your sleeve when you're in need of a quick and easy but delicious meal for your family! The best part is you're likely to have all of the ingredients on hand.
The possibilities with this chicken are endless, too. You could put it inside of tacos, burritos, quesadillas, enchiladas, on top of salads, etc.
This chicken has so much flavor and becomes perfectly tender so it's easy to shred. You've got to try it!


Pressure Cooker Salsa Chicken
Adapted from Cooking Classy
1 1/2 lbs. chicken breasts
2 tsp. chili powder
1 tsp. ground cumin
1/4 tsp. salt
1/4 tsp. pepper
1 tsp. garlic, minced
1 cup salsa
2 Tbsp. chopped cilantro

1. Place chicken breasts in pressure cooker pot.
2. In a small bowl, whisk together chili powder, cumin, salt and pepper. Sprinkle mixture evenly over both sides of chicken. Sprinkle garlic over chicken then pour salsa over chicken to cover.
3. Close and lock the lid and cook on HIGH pressure for 8 minutes. Let natural release for 10 minutes and then quick release any remaining pressure.
4. Shred and use in tacos, burritos, quesadillas, salads, etc.
