Fire-Roasted Artichokes

I had honestly never cooked or even eaten a fresh artichoke before this and I had no idea what to expect. I love marinated artichoke hearts that are already prepared for me, but I was a little nervous to cook one all by myself.

There are various ways to cook an artichoke, but grilling it seemed like the most appealing way.
You still have to steam it so its nice and tender, but the grill really adds a nice smoky flavor.
Looks pretty fancy, eh?
Fire-Roasted Artichokes

prepped artichoke(s) (See how to prep here/steam for 20 minutes)
olive oil
kosher salt and black pepper
melted butter for dipping

1. Prep artichokes by trimming the stem, bracts and top, steaming for 20 minutes and removing the choke.
2. Preheat grill to medium.
3. Brush both sides of the prepped artichoke with olive oil and sprinkle with kosher salt and pepper.
4. Place the seasoned artichokes on the preheated grill, center side up. Grill with the lid close for about 10 minutes and then flip so the center is on the grill grates. Continue grilling for another 5-10 minutes until you have nice grill marks and the flesh appears soft.
