Copycat Arctic Circle Lime Rickey

So apparently, Arctic Circle is mostly a Utah thing with the exception of some locations in various western states, but when I was a kid Arctic Circle was the BEST and lime rickey's were my favorite!
Last weekend, Jordan and I were headed to a BBQ and our assignment was chips and drinks and I wanted to do something different than bring the standard 2 liters of pop so I decided to whip up my own version of a lime rickey.

I knew I needed Sprite, limes, some ice and grape syrup. The first three ingredients were obviously easy to find, but I didn't know where to buy the grape syrup/didn't want to spend too much on it. So then good old Google came to the rescue and I found a recipe to make my very own snow cone syrup. So here it is. A good old fashioned lime rickey that is equally as refreshing as Arctic Circle's in the comfort of your own home.

Copycat Arctic Circle Lime Rickey
2 liter bottle of Sprite or 7UP
1-2 limes, cut into wedges
ice cubes
grape snow cone syrup (see recipe below)

Grape Snow Cone Syrup
2 cups white sugar
1 cup water
1 (0.14 oz.) package grape Kool-Aid flavored drink mix 

1. In a saucepan, stir together the sugar and water. Bring to a boil and boil for about 1 minute. Remove from heat and stir in the drink mix. Allow to cool completely and store in a container for pouring. 
2. Once the syrup has cooled, fill a glass with Sprite and add as much ice as desired. Pour 2-4 Tbsp. of grape syrup into the glass. Add more or less, depending on how much grape flavor you want. Squeeze a fresh lime wedge or two into the drink and throw the squeezed wedge into the drink for good measure.

  1. I too grew up on Arctic Circle Lime Rickeys. We replicated them as well, but instead of using a snow cone syrup (we found some CHEAP at Walmart) I use a spoonful of partially thawed frozen grape juice concentrate, like Welch's. IT WAS SO MUCH BETTER than the syrup. Highly recommended to try it out!

  2. I lived in Oregon where we had Arctic Circle. No one understands how incredibly refreshing & delicious their lime rickeys were unless they had them. I've experienced major withdrawal over them lol! I bought grape snow cone syrup & attempted it more than once - maybe I was adding too much lime juice. During the warmer months I'll experiment more until I get it the way I remember...best summer drink on the planet!

    1. They really are the best! I almost wonder if the key at Arctic Circle is that the Sprite is a fountain drink. It must be the extra carbonation, but it is really refreshing

  3. I visited Salt Lake for the first time last summer and we ate a lot of Arctic Circle and In & Out since we dont have either in TN. BOO! Ive been searching for a recipe for lime rickys evwr since! So glad i found this 😍😎

  4. Grew up on fry sauce and Lime Rikey's. Anytime I drive south on I-5 from Seattle past Portland, I insist on making a detour to the Woodburn, OR store for a fix!

My wife is from Utah and loves lime Rickey's, but she moved to Colorado with me and there isn't an Arctic Circle here, but I took her to Sonic where I ordered her a Sprite with grape flavor and like wedges, she said it was pretty close. I got mine with ocean water and it was a more sweeter version.

  6. I worked at arctic circle. Lime Rickey's key was absolutely the fountain drink Sprite. Still really close. Another thing that people don't think about is the amount of ice we used to put in. This goes for all our drinks honestly.

    We had to put in a very specific amount of ice. My boss used to tell us the reason we did this was because the colder the drink the less the ice would melt and the longer the carbonation would stay fizzy. Anyway this is a fun recipe its exactly what I do.

    1. I do agree about fountain Sprite! It's just better! And that's interesting about the amount of ice. There is just something nostalgic about a good lime rickey. I'm glad you like the recipe!

  7. Why not use grape juice? Will the Kool Aid flavor packet make it taste better or something like that? I was just about to make some for myself and I was just thinking of using normal grape juice.
